Baked Apple Rose Tarts with Honey Butter Recipe

These apple roses not only look amazing and will wow your family and friends, but they taste just like apple pie! They are delicious served warm with vanilla ice-cream, or served on their own as a cold pastry 🙂

Makes a dozen apple roses.

Ingredients

2 sheets puff pastry
pinch of flour
3 large red apples
1/2 lemon
bowl of cold water

For the Honey Butter

1/2 cup softened butter
1/4 cup honey
1/2 tsp cinnamon
1/2 tsp salt
1 tsp vanilla extract



Method

Preheat your oven to Gas Mark 5 (375F/190C).

Cut the apples in half and then spoon out the inner core and pips.  Remove the stem ends using a sharp knife. 

Slice all three apples horizontally as thinly as you can, popping them into a bowl of water with the juice of half  a lemon.  This will stop the apple turning brown.  Set aside. 

For the honey butter, add all the ingredients together and mix well, either by hand or using a handheld immersion blender.  Put aside.

Roll out the puff pastry on a lightly floured surface.  Cut the pastry into six equal strips, measuring approximately 12 inches by 2 inches. 

Microwave the bowl of apples in water for 5 minutes.  This will soften the apple and make it flexible.

Lay down a piece of greaseproof paper, and place a pastry strip on top.  Using a spoon or butter knife, carefully spread out a generous amount of the honey butter.  Once you have done this, begin laying down the apple slices along the top half of the pastry strip.  They should overlap a little, and the tops of the apple slices should be between 1 and 2cm above the top edge of the pastry.  

Fold the bottom half of the pastry strip over the apple slices, making a sort of sandwich, with the tops of the apple poking out of the top. 

Carefully roll up the pastry strip and it will form a beautiful rose shape. 

Place into a greased muffin tray.

Repeat until all of your pastry strips have been used.  You will get six apple roses from each sheet of pastry. 

Bake in the oven for approximately 40 minutes. 

Once baked, carefully remove from the muffin tray using a silicon spatula or similar. 

Serve immediately with vanilla ice-cream, or allow to cool on a wire rack and serve as a scrumptious cold pastry treat.
