This banana bread is so tasty! It is quick and easy to prepare, and the finished result is delicious and filling! This banana bread is perfect for breakfasts, snacks, or just as a sweet treat! It contains no nuts or any extra ingredients.
Ingredients
1/2 cup warm butter (not melted but soft)
3/4 cup light brown sugar
2 cups plain flour
1 tsp baking soda
1/2 tsp salt
2 lightly beaten eggs
5 mashed ripe bananas
Method
Lightly grease a silicone loaf tin and preheat the oven to Gas Mark 4 (350F).
In a large mixing bowl, add the flour, baking soda and salt. Whisk together.
In a separate bowl, add the sugar and the butter. Cream together. Add the lightly beaten eggs to the sugar and butter, and mix well.
Add the sugar, butter and eggs mixture to the mashed bananas and mix until well combined.
Add this mixture to the bowl of dry ingredients, and gently fold the wet ingredients into the dry ones. Do not overmix! You just want to make sure all of the mixture is moistened.
Transfer to the loaf tin and pop into the oven. Bake for 65 minutes. You can check the banana bread is ready by inserting a toothpick – if it comes out clean, then it is ready.
Leave to cool in tin for at least 15 minutes before turning out onto a wire cooling rack.
Once cooled, cut thick slices, and enjoy!
