There is virtually no sweet treat as warming and comforting in the icy depths of winter as rice pudding. And as those in the North, in Game of Thrones, often say “Winter is coming”…
So join Tim in this video as he begins preparing for winter, to find out how he made creamy and delicious rice pudding in our new and fabulous 7 in 1 8 Litre Instant Pot pressure cooker.
Traditionally, we have always made rice pudding in our slow cooker, however, this obviously takes quite a while… the beauty of the Instant Pot is that it took less than half the time to make this recipe. (So if you haven’t yet invested in a pressure cooker yourself, definitely look into it because it has been a game-changer for us!)
This recipe was a little bit of an experiment as we had some leftover vanilla soy milk which needed using up… and whilst the resulting rice pudding was absolutely delicious, (and very vanilla,) we will try it again with some semi-skimmed cows milk to see how that compares. So stay tuned for that upcoming video to find out which version we prefer!
Ingredients
- 1 cup rinsed pudding rice
- 3 1/4 cups milk (we used Alpro Soya Vanilla Soy Milk)
- 1 tsp vanilla extract
- 1 tin condensed milk

Instructions
Rinse pudding rice
Place rice and milk in the Instant Pot
Press Porridge (20 minutes)
Allow to naturally release pressure for 10 minutes
Then quick release pressure until fully depressurised
Add vanilla extract and condensed milk
Stir well
Serve with favourite toppings – e.g. cinnamon or strawberry jam
