Slow Cooker Mediterranean Chicken with Potatoes and Carrots

This is one of my new favourite slow cooker recipes! The prep time is only around 10 minutes, and the end result is a truly delicious meal (which serves 4), bursting with Mediterranean flavours – I hope you will give this a try!

Ingredients

750g – 1kg chicken breasts
350g peeled carrots (cut into thirds)
600g peeled potatoes (quartered)

Sauce:

1/4 cup olive oil
1/3 cup freshly squeezed lemon juice (approx one lemon)
1tsp salt
ground black pepper to taste
1tsp oregano
1 medium size onion – finely diced
2 large cloves of garlic – minced



Method

Spray slow cooker with a little oil to prevent ingredients sticking to sides.

Place chicken breasts in bottom of slow cooker dish.

Mix together all sauce ingredients.

Pour a little over top of chicken breasts.

Place all vegetables on top of chicken.

Pour over rest of sauce.

Pop on the lid, turn on slow cooker onto High for 4 hours or Slow for 8 hours.

My preference is to cook this meal on High for 4 hours – I have tried cooking this both ways but I think the flavours just pack more of a punch when cooked this way.
